About Elizabeth Slack:

 I spent the first 11 years of my life in Wausau, Wisconsin, before moving to northern Wisconsin where I attended middle and high school. I am the first person in my family to earn a bachelor’s degree! In 2014 I received a dietetics degree from the University of Wisconsin-Stevens Point. After graduation I was off to Ithaca, New York where I got my master’s degree in Applied Economics and Management with a focus in Behavioral Food Marketing at Cornell University. I graduated in May 2015. This program gave me the opportunity to work with Brian Wansink, professor and director of the Cornell Food and Brand Lab, before accepting my position at Nebraska Extension.

What is your position at Nebraska Extension?

I am the Food, Nutrition and Health educator in Antelope County. I want to work toward turning knowledge into “know-how” with Nebraska’s youth. I am really into turning the home and school atmosphere into a health-friendly environment. This way it is easier to overcome the challenges of completely changing learned habits without giving it much thought.


What drew you to Nebraska Extension?

When I arrived in Antelope county for my in-person interview I felt safe. The faculty and staff were humble and heartwarming. I believed it would be a great place for my family and me to settle down.


What aspect of working in extension do you enjoy the most?

Thus far I enjoy all the positivity in the building. After the first day I felt welcomed and respected.


What do you consider your greatest achievement?

The completion of my master’s degree during pregnancy is my greatest achievement to date.  I gave birth to my beautiful baby girl, Hazel Blu, during finals week! I was able to complete my program and receive my degree as scheduled. This would not have been possible without my boyfriend Timothy’s support throughout graduate school and continuously to my career here in Neligh.


What is something that most people don’t know about you?

Most people do not know that after Elvis Presley, my favorite singer is Justin Bieber.


What is your life like outside of work?

Life, right now, is adventurous. My family and I are getting to know the Norfolk area. We are trying new restaurants, looking for areas to spend some family time, and I am on the hunt for farmers markets. I enjoy spending time with my daughter, cooking and baking and watching marathons of The Big Bang Theory.
