What is your position at the University of Nebraska-Lincoln?

I am a meat laboratory manager in the Department of Animal Science.

What drew you to the University of Nebraska-Lincoln?

Mainly the position, being able to work in an educational setting and pass my knowledge on to people, was a part of the draw to the job. Also, the meat science faculty that were on staff at that time and getting to work with some of the top scientists in the meats field was a part of it. The Animal Science building and meat lab were in the final stages of a major renovation and the chance to help open and work in a brand new educational facility was a part of the draw.

What aspect of working in an educational setting do you enjoy the most?

Working with both undergraduate and graduate students and seeing them grow and develop as individuals is one of the joys of my job. I also enjoy working with the extension programs and helping small meat processors throughout the state improve the products they produce. I enjoy working with faculty that are not necessarily meats-oriented with some of the labs in their classes that utilize the meat lab.

What do you consider your greatest achievement?

Being a part of the development of students and seeing them become leaders in the meat science field and the meat industry is my greatest achievement.

What is something that most people don’t know about you?

I enjoy cooking and baking.

What is your life like outside of work?

My family and I have a small herd of cattle that we spend time working with. I have two grandchildren that live in South Dakota that I enjoy spending time with when I can. I enjoy fishing, gardening and generally spending time outdoors.
